Pure Snowdonia Heather Honey

Pure Snowdonia Heather Honey is a small-batch, single-ingredient heather honey gathered from Ling heather on Snowdonia’s mountainsides between late July and August. Collected at an apiary around 200m above sea level, this mountain honey is dark and richly flavoured with a sweet yet earthy finish—often celebrated as the “Champagne of Honey.”

  • Origin: Ling heather on Snowdonia mountainsides (approx. 200m asl)
  • Production: Small-batch, single-ingredient; bees managed with locally-reared stock and time-honoured, sustainable methods
  • Taste profile: Dark, rich, sweet with an earthy finish

Heather flowers are a rich nectar source, attracting bees, butterflies, and other pollinators. Heather is not known to be toxic to humans or pets, and deer usually avoid it. Heather requires more moisture than heath and is not considered invasive.

What does Heather Honey taste like? Plus

It's also, like many dark honeys, particularly high in antioxidants. The taste is just as distinctive. It's complex, aromatic and not too sweet – and combines smoky, warm, woody and floral notes in a flavour as intense and unrefined as the Welsh moorlands it comes from.

Why is Heather Honey so thick? Plus

Many researchers believe that this is due to the fact that much of its original contents upon honey production are held within its gel. And while Manuka is also known to be thick, Heather still manages to surpass it in this category.

Is Heather Honey raw honey? Plus

Heather honey is cold processed retaining the raw and natural properties of the honey. Heather honey naturally has a higher water content than all other honey, and this water content is what makes all honey liable to ferment. With heather the risk of fermentation is greater, it is just a fact of honey life!

Our Ling Heather Honey is reddish/orange to dark amber. It has a slightly bitter, tangy, pungent, smoky, mildly sweet taste that persists for a long time. It has a strong distinctive woody, warm, floral, fresh fruit aroma reminiscent of heather flowers.
