We answer the most common questions we're asked about this honey variety
How do you get soft set honey? Plus

We warm our award-winning Welsh Wildflower Honey in our creaming machine to about 45C to reset the crystal structure of the honey for about 1 hour. We allow the honey to cool until its around the 12C-14C mark. 10% of a seed honey which has the texture characteristics we're looking for (we use honey with a high percentage of Clover nectar) is introduced and then the machine stirs it intermittently for the next 10 days to produce a delicious, smooth, buttery honey product. The honey is placed into warm jars and left to " soft set" for a further 4 weeks until its ready for sale to you.

Should soft set honey be refrigerated? Plus

Any honey should be stored at ambient room temperature away from stoves and other kitchen appliances that generate high heat. You should ideally refrain from putting your honey in the fridge as this can cause it to change its texture unfavourably and isn't required to keep honey at its best or prolong its shelf-life.

Should I put honey or sugar in my tea? Plus

Ultimately, the choice between honey and sugar comes down to personal preference and the desired taste experience. If you appreciate the complexity of flavours and the natural taste and health benefits of honey over sugar tehn this might be the ideal option for you.

Why is my jar of honey hard? Plus

Over time, the natural sugars found in raw and unpasteurised honey begin to separate from the water content. This forms crystals and the honey can harden. This is a natural process and indicates that your honey is natural and of high quality.

Is honey bad if it hardens? Plus

Hardened honey is perfectly safe to eat and doesn't mean that your honey has gone bad. In fact, it's just the opposite! It means that your honey is natural and oh so good.

Because of the churning process, the buttery style of our award-winning Soft Set Honey has a fine smooth texture that naturally-crystallised honey doesn't have.
